Coyote Crest produces limited quantities of hand crafted Estate red wines. All winemaking is done at the estate in small lots in open top fermenters. Grapes are hand punched down 3 times a day during fermentation. No pumps are used to move wine; instead a gravity feed system is used to insure the gentlest treatment. Exposure to the atmosphere is kept to a minimum to guard against unwanted oxidation. Extreme care and sanitation procedures are adhered to.

Coyote Crest, the Alexander Valley Wine Estate, produces fewer
than 500 cases of hand-crafted wine from our steep south facing hillside
vineyards. Our vineyards yield fruit that creates wine of balanced
concentration and intensity layered with flavors of dark cherry, cedar,
blueberries and cassis. We age in the finest new French and American
barrels for up to 26 months. Our wine is unfined and unfiltered, drinkable
upon release and will improve with additional cellaring.

2004 Merlot, Alexander Valley, Estate Bottled 2002 Dos Rojos, Alexander Valley Cabernet Sauvignon/Merlot Harvest date Merlot: Sept. 7, 2002 / Harvest date Cabernet: Sept. 26, 2002 Cabernet fruit with small berry and cluster size was selected from our best mountaintop and hillside vineyard blocks. Merlot fruit from our steep hillside was harvested at the peak of ripeness. Fruit was gently separated from the stems and placed into open top fermenters for a 24 hour cold soak before adding yeast to begin fermentation. Cap punch down was done 3 times a day through out the 12 day primary fermentation period. Maloactoic fermentation had completed in mid and late December. The Cabernet and Merlot was aged individually for 12 months then another 14 after blending in 50% new and 50% two year old French oak barrels. At Coyote Crest all wine movement is done by gravity, never pumped. Bottled unfiltered and unfined allows the full character of each varietal to stand out. “The 2002 Dos Rojos (Spanish for two reds) is a blend of 50% Cabernet Sauvignon and 50% Merlot. It exhibits a rich robust flavor and a dense garnet color. Bouquets of menthol, spice and oak with layers of black cherries, leather and licorice on the palate lead to a smooth lingering finish.” 2002 Estate Cabernet Sauvignon, Alexander Valley Harvest date: September 26, 2002 Fruit with small berry and cluster size was selected from our best mountaintop and hillside vineyard blocks. Bouquets of menthol and vanilla with layers of black cherries, chocolate and licorice on the palate lead to a smooth long finish.”

in 50% new and 50% 2 year old French Oak chateau barrels from the finest
coopers. 235 cases produced. 2000 Dos Rojos, Alexander Valley Cabernet Sauvignon Harvest Date October 20, 2000 Fruit from each block was gently crushed into small open top fermenters, undergoing separate inoculated fermentations to develop their rich fruit flavors and deep colors. All wine has completed malolactic fermentation, is unfined and unfiltered to allow the full character of the varietal to stand out. Aged for 19 months in new and 2 year old French Oak chateau barrels from the finest coopers. 187 cases produced. "The 2000 Dos Rojos is 100% Cabernet Sauvignon that combines spicy jammy aromas, concentrated plum and berry like flavors. This wine fills the mouth with powerful structure and flavor with a rich concentrated finish. Enjoy it now or cellar age for years to come." Phil Cool, winemaker 1999 Dos Rojos, Alexander Valley Cabernet Sauvignon Harvest Date October 7, 1999 Fruit from each block was gently crushed into small open top fermenters, undergoing separate inoculated fermentations to develop their rich fruit flavors and deep colors. This Cabernet Sauvignon has completed malolactic fermentation, is unfined and unfiltered to allow the full character of the varietal to stand out. Aged for 28 months in new and 2 year old French Oak chateau barrels produced a silky smooth well balanced wine. 151 cases produced. "The 1999 Dos
Rojos 100% Cabernet Sauvignon has a beautiful deep garnet color and an
incredibly inky texture. The aromas are expressive and bold with an
overall bouquet of blackberries and toasty oak. This wine fills the mouth
with powerful structure and flavors reminiscent of black cherries, plums
and a lingering finish. Enjoy this wine for years to come; it is a
stunning example of California’s Alexander Valley Cabernet Sauvignon which
will develop beautifully with bottle aging." |
